UMBC's InfoSec program is targeted at continuing education students, but is clearly a step in this direction.

However, most schools don't have any system administration courses in their graduate or undergraduate programs. (UMBC has one, offered sporadically.) It would be a prerequisite for a security course.

Some places will certainly do this, however.
